hello, please remember that mornay is a classic sauce made from a bechemel sauce with grated gruyere cheese, whisked in.my suggestion would be use whatever recipe you may have and add your cheese to your pie filling.gruyere is a harder somewhat smelly cheese.usually from switzerland or france and is similar to what we know as swiss cheese, except is far superior in taste and quality.

good luck
Here is a mornay sauce, then all you have to do is add your cooked chicken and bacon and vegies if you wish.

2 tablespoons margarine

1 cup powdered milk

2 cups hot water

1 cup grated cheese

salt and pepper to taste

2 tablespoons plain flour

Melt margarine blend in plain flour until smooth, add hot water and powdered milk return to stove and stir until smooth and thick. Add cheese, salt and pepper and stir until cheese has melted and starts to bubble. Pour over chicken and place in your prepared pie dish. You can use ready made pastry sheets from supermarket. I use short cut pastry for base and use puff pastry for top. cook 180 deg oven until pastry is golden brown
