*********CHICKEN BREAST WITH LEMON


4 boneless chicken breasts


Flour for coating


Salt and pepper


1 tbsp. oil


5 tbsp. butter


2 tbsp. lemon juice


3 tbsp. chicken broth or stock


3 tbsp. chopped parsley


Cut chicken breast into 2 slices (horizontally). Season flour with salt and pepper, then coat chicken. Heat oil and 3 tablespoons butter in large skillet. Add chicken and saut茅 5-6 minutes on each side or until tender (medium-low heat). Place on a warmed serving platter and keep hot. Add lemon juice and stock to pan juices. Bring to boil. Boil 1 minute. Add parsley and remaining 2 tablespoons butter. Stir until blended. Pour over chicken.
LEMON PEPPER CHICKEN





2 lbs. chicken, cut up


1 tsp. butter flavoring


1/2 c. butter


1/2 tsp. garlic powder


2 tsp. lemon pepper





Melt butter and butter flavoring together; pour over chicken; sprinkle with garlic powder, salt and lemon pepper marinade. Bake at 350 degrees, uncovered, for 30 minutes. Serve with rice.


LEMON PEPPER CHICKEN MARINADE





1 bottle Italian dressing


1 bottle honey dijon dressing


1 bottle balsamic vinaigrette


1-2 tsp. lemon pepper





Combine all ingredients and mix thoroughly.


Marinate 1-2lbs of chicken (overnight for best results) and grill. Yummy stuff!





INGREDIENTS


2 teaspoons butter


1 tablespoon ground black pepper, divided


1 skinless, boneless chicken breast half


1 tablespoon fresh lemon juice


Melt butter in a small skillet. Pepper the skillet with 1/2 tablespoon of the pepper, then lay the chicken breast onto the pepper. Squeeze fresh lemon juice onto the chicken, then season with the remaining pepper.


Saute chicken breast for about 5 to 7 minutes, then turn to the other side, squeeze lemon juice onto the other side and saute for another 5 to 7 minutes (or until chicken is cooked through and juices run clear).

***Marinade***


1/4 cup Lemon Juice


1 tablespoon Pepper


1/2 cup Olive Oil


6 Chicken Breast Halves


***Gremolata***


1 tablespoon Fresh Thyme


2 Cloves Garlic -- minced


1 teaspoon Lemon Zest





Directions:





In a bowl whisk together lemon juice, pepper and salt to taste. Add oil in stream whisking until emulsified. Flatten chicken 1/4 inch thick.





Marinate chicken in marinade for 30 minutes. Grill on oiled rack about 2 minutes per side. For gremolata, mix remaining ingredients. Sprinkle over chicken just before serving.

4 chicken cutlets


1c. all purpose flour


1t. salt


2T. extra virgin olive oil


3T. unsalted butter


2 cloves of garlic, minced


1.5c. dry white wine


2T. fresh lemon juice


2T. lemon pepper seasoning


3/4c. chopped fresh flat-leaf parsley


Mix the flour and salt together and dredge the cutlets in the mixture, tapping off excess. In a large saute pan, heat the oil and 2T. butter over medium high heat. When hot, add chicken and saute until golden, about two minutes. Turn the chicken over and cook another two minutes, or until cooked through. Keep chicken in a warm platter while you make the sauce. Add the chopped garlic to the hot pan and saute briefly, then add the white wine. Cook for two minutes, then add 1T. butter, the lemon juice, lemon pepper, and parsley, and stir until the butter melts. Pour the sauce over the chicken and serve.
