this is super delicious!!

Vegetable Frittata with Asiago Cheese

1 1/2 teaspoons olive oil

1 medium-size red onion, chopped

1 red bell pepper, coarsely chopped

1 medium zucchini, chopped

2 cups (packed) spinach leaves, torn into 1-inch pieces

3 large eggs

6 large egg whites

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 ounce shaved Asiago cheese

1 cup chopped tomatoes

1 tablespoon chopped fresh basil

Preheat broiler. Heat olive oil in 10-inch-diameter nonstick skillet over medium-high heat. Add onion and bell pepper; sauté until golden, about 8 minutes. Add zucchini; sauté until tender, about 5 minutes. Add spinach; stir until wilted, about 1 minute. Season with salt and pepper.

Whisk eggs, egg whites, salt and pepper in medium bowl to blend. Pour egg mixture over hot vegetables in skillet; stir gently to combine. Reduce heat to medium-low. Cook without stirring until eggs are set on bottom, about 5 minutes.

Sprinkle cheese over frittata. Broil until cheese melts, about 2 minutes. Sprinkle with tomatoes and basil.Does anybody know a recipe using eggs without using meat, chicken %26amp; any seafood for vegetarians?
omelet: 2 large eggs, quater cup finely shredded cheddar cheese, diced green pepper to suit, and/or finely diced sundried tomatos to suit.

You whisk the eggs with 1 tbsp of water or milk, add salt and pepper and wisk that in as well, add the ingredients. Take a warmed skillet on medium and spray with canola oil, pour mixture in and let firm up and add more cheese (i like cheese) flip over for about 2 mins then flip over to other side for 2 mins. voila!!! btw you can just wait and add the cheese before flipping it as well.It will just be in the middle then. and add some italian seasoning to the sundried tomato recipe. yummy.

Try to make egg salad as well to make sadwhiches.

4 boiled eggs

2 tbsp mayonaisse

2 tsp lemon pepper

1tsp minced garlic

4 boiled eggs

1 and one half tsp of mustard(yellow)

3 Tbsp of mayonaise

half tsp of piclke juice

salt and pepper to taste

Toast your bread before spreading on
Do you specifically want to have eggs or just clueless how to cook without using meat? Any dish can be cooked without meat excepting those that are primarily meat (e.g. steak, chops, roast chicken). You can substitute cheese or just use veggies instead of meat according to you taste-or both.

If you specifically want the eggs, there are thousands of classic recipes using eggs that you can get by searching ';egg recipes';.

My particular favorite is spinach quiche or egg salad.
