Looking for a recipe where i can make soup broth without chicken?

like, is there a combo of spices or something that i could use instead of getting juices from a chicken or buying a can of broth?Looking for a recipe where i can make soup broth without chicken?

If you are just going for a shortcut or a price cut choose bouillon. Little cubes of condensed stock. These are, however, high in salt like most broth.





If you are trying to avoid the meat, you can go with a vegetable stock. A simple recipe would be to simmer 2 onions, 3 carrots, and 4 sticks of celery for an hour, after chopping into large pieces. You can then strain the chunks out and you have an excellent vegetable stock. You can change the flavor up by adding a head of garlic and changing the ingredients a little. Salt and pepper to taste.
I would, of course, suggest veggie broth as well.


However, if you are looking for a great chicken flavor without all the work see if you can find the following:

It comes in a small jar (near the boullion and broth) and comes in a paste form. It works GREAT!

Vegetable broth is a good suggestion, or you could always use chicken boullion cubes or powder. It is actually a pretty good substitute for real chicken stock.
Pierce a large white, peeled onion with 6 whole cloves.


Place in a large pot along with 2-3 roughly chopped celery stalks, a few cloves of peeled, pressed garlic, a chopped leek if you'd like, and some peeled and rough chopped carrots. Cover with cold water and bring to a boil.





When things turn to mush, stop cooking and drain through a strainer into a clean bowl, pressing the veggies through the strainer with the back of a soup ladle, extracting every bit of juice and flavor you can get.





then, toss the veggies, or add them to leftover spaghetti sauce.

Basic Vegetable Broth Recipe


INGREDIENTS:


1 onion, chopped


1 carrot, chopped


2 stalks celery, chopped


1 potato, chopped into large chunks


1/3 cup mushrooms, chopped in half


3 cloves whole garlic


3 bay leaves


1 tbsp soy sauce


8 cups water


dash salt and pepper


PREPARATION:


Place all ingredients in a large pot and bring to a boil. Reduce heat and simmer for at least an hour. Strain out the vegetables and remove the bay leaves. This broth can be used as a base for soups, gravies and more.
You can use the buillion cubes (chicken, beef) and just add water and whatever else you want. I always keep buillion cubes.
Make a vegetable broth.





2 carrots


2 onions (or one onion and one leek)


3 stalks of celery


salt


boiling water





Clean 2 carrots, two onions (or one onion and one leek) and three stalks of celery, then cut them into 1” pieces. Put them into a food processor and pulse to mince until they are very finely chopped. Heat a tablespoon of olive oil in a stock pot, then put the vegetables in to wilt, stirring and avoiding browning or catching. When they start to smell really good, add about 2 liters or quarts of boiling water and 1 teaspoon of salt. Simmer for about 20 minutes. It can be used just as it is and does not need to be strained for the above recipe. Rutabaga, turnips, tomatoes, herbs and other aromatics can also be used for a richer flavor.
just make your soup and add the vegies and ingredients you like -- then you will have vegetable broth
