Napolitan tomato and herb sauce / Chicken Romana Recipe?!?

I've recently ate at Frankie and Bennys and chose this off the menu. I really enjoyed it and really want to make it myself at home. Does anyone have the recipe to this or a simular one to it? I know the chicken, bacon and pepperoni bit is quite self explanitory but how do you make a Napolitan tomato and herb sauce? This is how it is described as on the menu:





Chicken breast pieces, spicy pepperoni and pancetta bacon tossed with Mamma's Neapolitan tomato and herb sauce.

Ingredients





3 tablespoons olive oil


2 garlic cloves chopped


1 425g/15oz tin chopped tomatoes


1 teaspoon dried oregano or 1 tablespoon fresh


2 teaspoons dried basil or 1 tablespoon fresh


2 teaspoons Molasses sugar


Salt and black pepper to taste





Directions





* Heat the oil in the pan and gently fry the garlic until slightly browned.


* Remove from the heat and add the rest of the ingredients.


* If using fresh herbs add these after the sauce has been cooking for 15 minutes.


* Return to the heat and simmer gently for 25 minutes, stirring frequently until all the liquid has disappeared from the surface.


* Serve with freshly cooked pasta and freshly grated Parmesan.Napolitan tomato and herb sauce / Chicken Romana Recipe?!?
Start by pouring some extra virgin olive oil in a saucepan (just enough to cover the bottom) on a very low fire.


Put in a couple of garlic cloves cut in half. When the garlic turns golden, remove it and pour in the tomatoes.


Depending on the recipe, your tastes or on what is available, you can use diced fresh tomatoes, tinned peeled tomatoes, or sieved tomatoes (italian ';passata';).


Add the herbs you prefer and cook for 20-30 minutes.


With some fresh herbs, like basil or parsley, it is better to add half of it while cooking and use the rest as garnish.
