GREEK CHICKEN WITH FETA

1/2 lb. Feta cheese, sliced

1 cut up fryer, skinned

1 tbsp. plus 1 tsp. olive oil, divided

4 med. onions, sliced

2 lg. cloves garlic, minced

1 (16 oz.) can tomatoes with liquid, chopped

1 tsp. oregano

1/4 tsp. salt (if desired)

Fresh ground pepper to taste

Place Feta in a bowl of water and set aside (to remove salt). Heat 1 tablespoon oil in skillet and brown chicken on all sides over moderate heat. Remove to platter.

Add teaspoon oil and onions to pan. Stir 10 minutes. Add garlic. Cook another 5 minutes still over moderate heat. Add tomatoes, their liquid, oregano and stir.

Place browned chicken on sauce, sprinkle with salt if desired. Cover. Simmer 30 minutes. Arrange Feta on top of chicken, cook 15 minutes.

Serve with baked pita rounds sprinkled with butter and garlic salt.
Cook the chicken so it keeps juice.

Once the chicken is cooked, dice and mix with plain Greek yogurt and diced cucumbers. (Mint is optional.)

Cut pitas into two, stuff with chicken %26amp; yogurt mix and top with feta cheese. Greek olives are also good with this.
Grill your chicken in some olive oil seasoned with some salt and pepper, stuff the cheese and chicken in the pita, if you have some lettuce or tomatoes, or other kind of veggie that would be good too. You could add some kind of dressing if you'd like!
Marinate the chicken in some greek or italian dressing for a bit. if you have it, bake at 450 for about 45 mins. Slice thin and make sandwiches of the seasoned chicken, feta, and bread.
How about cutting the chicken into strips and browning them. Fill the pita with the chicken drizzle ranch dressing over it, and crumble the cheese on top? If you had veggies, you could add those too (cooked or raw).
