Any vegetable recipe to go with roasted chicken?

i am going to host a dinner party, what vegetable recipe is perfect?Any vegetable recipe to go with roasted chicken?
A combination of potatoes, carrots, onions and celery,


Put them in a roasting pan lightly coat lightly with


olive oil and seasonings onion powder, garlic powder,


salt %26amp; pepper and let bake with the chicken or separate.


Yum!


Or oven roast winter squash butternut or buttercup the same


way, coat with a little olive oil, salt %26amp; pepper.

Special roasted potatoes and green beans are my perfect chicken pairings-











Rosemary %26amp; Garlic Roasted Butter Gold Potatoes


1 3/4 pounds yukon gold potatoes, cut into 1-inch pieces


3 garlic cloves, minced


3 to 4 tablespoons olive oil


Coarse salt and freshly ground pepper


1 sprig fresh rosemary, picked


Cooking Directions





Preheat oven to 350掳. Place potatoes and garlic on a rimmed baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.


Roast until dark golden brown, 30 to 45 minutes. During the last 5 minutes of roasting, increase the temperature to 500掳, and sprinkle with rosemary.


Remove from oven, and serve.








Balsamic Green Beans


Green beans


extra virgin olive oil, as needed


1 large shallot, medium dice


1/4 pound green beans


2 tablespoons good quality Balsamic vinegar


1/4 cup toasted almonds, chopped


Kosher salt and freshly ground black pepper





In a large saut茅 pan over medium-high heat, add 1 tablespoon extra virgin olive oil and heat until shimmering. Add the beans and season lightly. Cook until they begin to color, stirring occasionally to prevent burning, 6 minutes. Add the diced shallot, and toss to combine. Deglaze with the balsamic vinegar, saut茅, and cook until almost dry then remove from the heat. Season to taste. Add the almonds last then set aside, covered with foil until service.
i love roasted veg-easy,yum and different.take carrotts -butternut squash- red and white onions- parsnips etc..cut into cubes and parboil for about 15 mins until slightly starting to soften.drain and place together in roast tin with thyme[fresh if poss] sea salt %26amp; pepper with generous glug olive oil--roast in oven same time as meat until cooked through and crisp.


puree of swede and carrot with lashing butter and pepper is very special!
I don't have a particular recipe in mind, but if you browse through the internet and your cookbooks you can probably find a great Ratatouille recipe. Goes great with roast chicken. Good luck and enjoy your dinner party!
