Does anyone know the recipe for the chicken served at medieval times dinner and tournament?

i will forever be greatful if someone tells me the chicken is so good would like to eat it again but i dont want to go back to medieval times i seen the show alreadyDoes anyone know the recipe for the chicken served at medieval times dinner and tournament?
I am a former chef from canada and had a friend who was a chef for the Medieval Times in Toronto ON where I live, he did a very simple seasoning, and being a food history buff with info for all kinds of cuisines down through the ages, I would have to say from my information and reading, they had few herbs and spices, salt was even very expensive, so roasting was the most convenient way, boiling to for soups and meat for pie was also used.





Herbs like wild thyme, celery leaves, wild rosemary, so for a modern method get fresh or dried herbs, pulse them with the celery leaves, some butter and salt and pepper into a paste, rub this inside and under the skin and roast in the oven, serve with what ever starch you like but potato's did not make it to Europe until after Columbus came back.
