Veal and Chicken Parmesan


debone chicken and remove skin


with a meat maillot pound chicken and veal to a very thin thickness


dredge in flour and brown in hot evoo


lay in a baking dish


add pasta sauce (I use Hunts, in the can)


top with mozzarella cheese


sprinkle with grated Parmesan cheese

Marsala goes with either Chicken or veal. Mushrooms sauteed in butter then add floured and pounded veal or chicken. When it's nicely browned add in some Marsala and light on fire. The flour in the meat with the butter makes a thickener for the sauce. If it should break(not be saucy) add a little half and half or cream to it. It goes great with rice on the side.
Do a chicken/ veal marsala and some sauteed broccoli rabe or steamed spinach with fresh garlic and lemon. Marsala is easy to make and goes with both meats.
bread crumb and fry the cutlets, pour a jar of sauce over top, then top with either mozerella or provolone cheese, bake.
