Has anyone a good recipe for a chicken indian curry?

Chicken Curry





1 lb Chicken breast, boneless and skinless


2 tbl Oil


1/2 tsp Cumin


4 x Cardamom seeds


1 x Thai chile


2 x Cloves


2 med Onion, finely chopped


3 x Tomato, whole peeled


1 tsp Ginger paste


1 tsp Garlic paste


2 tsp Soy sauce


1 1/2 tsp Garam masala


1 tsp Chilli powder


1/4 tsp Pepper


3/4 cup Water





Clean the chicken, making sure to cut off all fat. Heat the oil, then brown the cumin seeds and cardamom. Add the Thai chile (be careful of the fumes) and cloves. Add the chopped onion, then cook until brown. Then add the tomatoes, ginger paste, garlic paste, and soy sauce. Cook together until all has a pasty texture. Add remaining spices and mix well. Put in the chicken, and stir until coated well with the paste.


Cook for five to seven minutes, then add the water. Cover and cook until tender, about 20 minutes. Remove the chile before serving. Garlish with fresh cilantro and serve with cooked rice.

Indian Curry Chicken





Ingredients


3 tablespoons tomato sauce


3 tablespoons plain yogurt


1 cup water


1 inch cube of ginger


2 tablespoons water


4 cloves garlic


1 cut-up, skinned chicken


2 bay leaves


3 tablespoons oil


1 cinnamon stick


5 cardamom pods (green if you can find them)


5 whole cloves


1 teaspoon hot pepper flakes


1 teaspoon turmeric


1 teaspoon salt


1/8 teaspoon pepper


1 tablespoons lemon juice





Directions





Mix the tomato sauce, yogurt and water and set aside.


Blend the garlic, ginger and water until smooth. Brown the chicken pieces in the oil Remove the chicken from skillet and lower heat.


Add the cinnamon stick, bay leaves, cardamom pods, cloves and hot pepper flakes. Stir for 30 seconds.


Add the garlic and ginger paste and the turmeric.


Stir for 1 minute. Add tomato mixture, salt, pepper and lemon juice. Stir.


Add chicken, cover and simmer for 30 minutes, turning chicken a few times. Serve with plain rice.Has anyone a good recipe for a chicken indian curry?
Get a tin of Vindaloo sauce from some shop, most supermarkets have them.





Fry onions and meat, add sauce and let it bubble over for half an hour.


Cook basmati rice.





Eat and enjoy. (best next day)





You can麓t make a better sauce than that yourself, hence the tin (Harwoods)

Basic Chicken Curry





Ingredients


2 tbsp olive oil


1 tsp chilli powder


1 tsp chilli flakes


2 garlic cloves, peeled and crushed


1 tsp turmeric


1 tsp ginger


1 chicken breast, diced


陆 onion, peeled and diced


2 tomatoes, diced


110ml/4fl oz double cream


1 lime, juiced


3 tbsp fresh coriander, chopped


2 tortillas, toasted





Method


1. Preheat a medium pan.


2. Heat the oil in the pan before adding the spices and frying for two minutes.


3. Add the chicken and saut茅 for two minutes.


4. Add the onion and tomatoes and leave curry to simmer for six minutes.


5. Pour in the cream and add the lime juice.


6. When the cream has heated through and reduced, remove the curry from the heat.


7. Add the coriander and stir well.


8. Transfer the curry to a large deep bowl and serve with the toasted tortilla.

pop some black mustard seeds in hot oil.


add butter and onions - sweat


add coriander seed, garlic, ginger, cinammon stick, turmeric, dried chilli flakes


add chopped chicken, stir and fry until sealed


add tin of toms


bubble away until cooked and thickened


add teaspoon garam masala


cook for 5 more mins


serve





have been known to add mushrooms with chicken and lime pickle at end for more heat!
