What is the recipe to make a crispy yet juicy fried chicken?

One way to keep your chicken juicy is not to over cook!!





Here is a great way to fry chicken that is crisp and juicy. This is the ONLY way i fry chicken.





Buttermilk Fried Chicken...





Cover cut up chicken with ice water and salt heavily.( Chicken will not be over salted.) Soak several hours.


Drain; now cover chicken with buttermilk: soak an hour





Put flour in a ziplock bag and add pepper: Let excess buttermilk drip from chicken and drop a couple of pieces in flour......close bag and shake to coat. Do all pieces of chicken. Let flour coated chicken pieces dry on paper towels or wax paper.





Fry in a cast iron skillet with a half an inch of Crisco or cooking oil. Oil should be very hot but not smoking.....do not allow chicken pieces to touch.....fry on one side until golden brown then turn and fry on other side. Crispy Fried Chicken





This chicken is crispy and moist. The flavorings add a delicious taste.





1 cup flour


1 1/2 teaspoons basil


1/2 teaspoon salt


1/2 teaspoon onion powder


1/4 teaspoon pepper


1 frying chicken, cut up


1/2 cup buttermilk


1/4 cup vegetable oil





Combine first 5 ingredients.





Rinse chicken pieces and pat dry.


Coat with dry mixture.


Dip in buttermilk.


Again, coat with dry mixture.


Heat oil in large skillet on med hi heat.


Fry pieces, turning often, for 10 minutes.


Reduce heat to med and fry, turning often for another 30 minutes, or until juices run clear.
Personally I think the secret to crispy and juicy fried chicken is to turn the chicken only once. Let it get done on one side and then turn it over and let that side get done and don't touch it anymore until you lift it out of the pan.
I cut my boneless skinless chicken breasts into chunks and then soak them in milk with a couple of beaten eggs....then I completely coat my chicken with Panko bread crumbs that I get at the local Oriental market...I deep fry them and they are very moist and slightly crunchy....My kids love these it is the only way they want chicken any more and my husband sure likes them too. This was my own creation ! My husband and child love it and its always a hit with the Family. Pan fried chicken





In a cast iron skillet put half Crisco shortening and 1/2 olive oil bring to 375 temp (med high temp) should only be enough so that it only reaches half way up the pan if that meanwhile~~





In a zip lock bag:


2 cups instant Idaho mashed potatoes


1 cup self rising flour


2 tbs paprika


4 tbs garlic salt


lots of freshly ground pepper, If you aren't able to do this its about 2 tbs of table pepper


and about half a palm full of all purpose season salt





in a separate dish mix together


2 eggs


2 cups of butter milk








place chicken in buttermilk mixture


one piece at a time put in bag of flour mixture and evenly coat


shake off any extra batter turn burner down to MED temp





place in skillet , make sure not to over crowed pan, allow a 1 inch space btwn each piece. DO NOT MOVE CHICKEN ONCE PLACED IN PAN!!! allow to cook on first side until you see the blood rise to top of the pieces. then turn cook an additional 5-7 minutes or until golden brown. place chicken pieces on plate covered with paper towels and serve immediately

in a baking pan melt 1 half stick of butter, season flour roll the chicken in flour and place on pan at 350 , for 45 min, you have to turn chicken over on the otherside so it can cook. EASY FRIED CHICKEN and moist, enjoy. kasza
First wash the chicken pieces, then dip them in flour, then in buttermilk and then back into the flour. Fry in oil. Keep turn chicken till golden brown.
i got a recipe for kfc off the secret recipe site, the secret is you dip the chicken in egg milk wash, then the seasoned flour, flour, salt pepper chicken salt-


the juiciness comes from the way its fried, deef fry in oil in a pressure cooker, i just use my deep fryer and keep the lid in for approx 10 minutes

I like to use boneless skinless chicken breast. Wash chicken, drizzle with olive oil, dip in flavored bread crumbs. Bake on sprayed cookie sheet on 350degrees for 45 minutes or until juices run clear. Yum

No matter what batter you use the best way is to fry in good oil and most IMPORTANT OF ALL = the oil must be hot - not smoking but hot. Some use a thermometer.... I've been cooking for so long that I don't. Remember when you put the chicken in the oil its (the oil) temperature will drop so you'll have to turn up the heat and then lower it again soon after in order to keep a constant temp.
