Anyone have an easy chicken cordon bleu recipe?

that they've tried and liked? Also, I don't have swiss, what would be better to use American or Moz?Anyone have an easy chicken cordon bleu recipe?
This is my favorite one. I would substitute the mozzarella for the swiss.





* 4 tablespoon butter


* 1 cup flour


* 4 boneless, skinless breasts of chicken


* 2 eggs lightly beaten


* 4 very thin slices smoked ham


* 2 cups bread crumbs


* 6 ounces Lorraine swiss cheese, cut into four chunks





Directions





Preheat oven to 375 degrees. Melt butter in glass baking dish. Lightly flatten chicken breasts between plastic wrap with mallet. Lay 1 slice of ham and 1 piece of cheese on flattened breast, fold in half and seal close with toothpicks. Repeat process for remaining chicken breasts. Coat each piece with flour, then eggs and then bread crumbs. Place chicken pieces in glass baking dish. Turn to coat with butter. Bake for 40-45 minutes or until golden brown.Anyone have an easy chicken cordon bleu recipe?

substitute swiss for emmental or gruyere cheese


Chicken Cordon Bleu recipe


ingredients


4 chicken or turkey breasts, boned and skinned


4 slices of ham


4 oz (125g) Emmental or Gruyere cheese


1 oz (25 g) butter


5 fl oz (150 ml) dry white wine








method


1. Place each chicken breast between non PVC film, flatten with a mallet.





2. Place a slice of ham and then a thin slice of cheese on each fillet.





3. Season and roll up, securing with string. Melt butter in a flameproof casserole and gently fry fillets for 8 to 10 minutes until lightly brown all over.





4. Add wine and bring to the boil, cover and cook in a moderate oven Mark 4 (180脗掳C) 350脗掳F for 40 minutes.





5. Remove fillets and keep warm. Rapidly boil cooking juices until reduced by half, strain and serve with chicken.





6. Accompany with green vegetables.

You could sort of do an Italian goof on cordon bleu by using the mozzarella. Use prosciutto instead of ham, if you do that.





I would definitely NOT recommend using American cheese. Yeugh. It is not a substantial (it turns into liquid goo when it melts) or flavorful enough cheese to do justice to chicken cordon bleu.
