Does Anyone Know How To Make ';Chicken A La King'; Or Have A GOOD Recipe For It?

Back in the day there used to be these ';TopShelf'; or ';Hormel'; brand meals at the grocery store and they were meals that did not have to be kept in the 'fridge.They could be kept on the shelf. Well, there was one called Chicken A La King and it was awesome.They don't make it anymore.(This was back in the early 90's) It was in a creamy white sauce with chicken breast, mushrooms, red bell peppers, carrots, a little bit of onion maybe and white rice. I can still find the chicken 脿 la king in the can, I don't recall it having rice in it, though. At my store it's over by the soups. Here is a great recipe...





Chicken 脿 la King





Yield - 4 servings





8 puff pastry shells, such as Pepperidge Farm


2 tablespoons extra-virgin olive oil


4 ribs celery with leafy tops, chopped


3 carrots, chopped


1 large onion, chopped


1 bay leaf


Salt and freshly ground pepper


Half of a red bell pepper, seeded and chopped


2 tablespoons butter


2 tablespoons flour


One 32-ounce container (4 cups) chicken broth


2 pounds skinless, boneless chicken breast, cut into 1-inch cubes


1 cup heavy cream or half-and-half


1 cup frozen green peas


3 tablespoons chopped fresh tarragon





1. Bake the pastry shells according to package directions.





2. While the pastry shells bake, in a large, deep skillet, heat the olive oil, 2 turns of the pan, over medium to medium-high heat. Stir in the celery, carrots, onion and bay leaf, season with salt and pepper and cook, stirring frequently, for 5 minutes. Add the red bell pepper and cook for 2 minutes. Push the vegetables to the side of the pan, add the butter to the pan and melt. Whisk in the flour and cook for 1 minute. Whisk in the chicken broth, add the chicken and bring to a boil. Reduce the heat and simmer for 8 minutes. Stir in the cream and bring just to a boil, then stir in the peas and tarragon and cook for 2 minutes. Season with salt and pepper to taste.





3. Place 2 hollow pastry shells in each bowl and fill with Chicken 脿 la King. Cover with pastry shell tops.Does Anyone Know How To Make ';Chicken A La King'; Or Have A GOOD Recipe For It?
INGREDIENTS


1 cup diced, cooked chicken meat


1 (10 ounce) package frozen mixed vegetables, thawed


1 1/2 cups chicken broth


2 teaspoons cornstarch


1 (5 ounce) can evaporated milk


salt and pepper to taste


DIRECTIONS


Combine chicken, vegetables and broth or wine in a medium saucepan over medium low heat. Stir all together and let simmer until heated through.


In a small bowl beat cornstarch into evaporated milk and add to chicken mixture. Reduce heat to low and cook, stirring constantly, until thickened. Season with salt and pepper to taste, unless leftover chicken has enough of its own seasoning already. Serve hot.
First make your cream sauce: 1 c milk, 2 T flour, 1 1/2 T butter or marg. 1/2 tsp salt.


melt butter in frying pan, remove from heat, stir in flour to make a smooth paste. Add 1/3 of the hot milk and stir until the mixture is smooth. Add rest of liquid and salt, and cook until smooth and thick.This should take about 10 min.


Remainder of recipe:


1 1/2 c. cooked chicken cut in cubes, 1 minced green pepper, 3 chopped large mushrooms, 1 1/2 c. white sauce.


Add chicken and all other materials to white sauce and heat for 10 min. Serve on toast or over rice.

in a large pan , cook 1 c.fresh mushrooms,sliced, with 1/4 cup c. chopped green pepper, and 1/4 c, chopped onion in 3 t, margarine. stir in 2 t, flour, 1/2 tes. paprika and 1/2 tea. salt. add 21/2 cups half-and-half or light cream. cook and stir until thick and bubbly. stir 1 cup of this sauce into 3 beaten egg yolks;return to pan.cook and stir over med. heat until bubbly. stir in 2t. dry sherry and 1 t. lemon juice. add 2 cups cooked, cutup chicken and2 t. diced pimiento. serve over toast. ENJOY
